Jamie Oliver Inspired Lemon Chicken Breast and Sweet Tomato Pasta
Jamie is a real whizz in the kitchen and I have really taken to some of his dishes. While I am not a Chef I do like to tweak recipes to suit my taste.
I have made these dishes twice, The ‘Jamie’ way and my way. I found that leaving out a few ingredients and changing the portion size still makes for a delicious dish. Now I can’t take all the credit, so thanks Jamie, and I hope you don’t cringe too much.
The Sweet Tomato Pasta is a wonderful dish and I tend to adjust the portions to suit a dinner for two and leave out the balsamic vinegar. I found the vinegar to be a little overpowering as I like the sweet tomato taste.
The Lemon Chicken recipe is another supreme dish however I prefer to buy chicken breast instead of chicken pieces. I’ve had two attempts at this dish because the lemon was to overpowering for my man. If you like lemon but prefer a subtle taste then just use half a small lemon(juice) and grate only half the rind. Add the salt, pepper, mixed herbs, and a little oil to a bowl with the chicken breasts. Swish them around, cover, and refrigerate for a few hours or prepare it the night before.
If you don’t have the time to spare, then prepare the ingredients before you start making the pasta and let the chicken sit in the marinade while you get on with the rest of the meal. At least this will give the chicken a little time to soak up the lemon juice. To the pan heat a little olive oil and add the chicken. I use a low heat and pop a lid on the frying pan to save splatter and keep in the heat.
